How to Brew

 

Việt Nam’s ancient tea culture has evolved into a personal and casual affair. Friends catch up over several brews, pouring and offering to one another. The same leaves are used for multiple brews. 

We suggest the Vietnamese brewing method below. We learned it from our friend and partner Việt Hùng Nguyên, a Vietnamese tea master.  He taught us that tea depends on four elements: the water, the leaves, the teaware, and the person brewing. 

You can use the following instructions with the brewing times and temperatures indicated on your là lạ lá tea package.

Choose a brewing style:

Vietnamese Style  |  Single Mug  |  Cold Brew

 

 

1. Gather

Gather your tea and teawares, and heat the water in a separate kettle to the temperature indicated on your tea label.

2. Measure

Measure out your tea into the tea holder based on the size of your teapot. The ratio is generally 7 grams per 100ml of water, but check the label on your tea package.

3. Warm the Vessels

Warm and cleanse the teawares. Fill the teapot with hot water and pour it into the fairness vessel and cups.  Then discard all the water from all vessels into the refuse bowl. 

4. Steam

Put the dry tea leaves in the teapot and replace the lid. Gently shake the leaves a few times in the teapot to lightly steam them.

5. Fill

Pour water the over the tea leaves in circular motion and replace the lid.

6. Steep

Brew for the amount of time indicated on your tea package. 

For each brew after the first, add 10-20 seconds to the steeping time. (And make sure your water is still the right temperature!)

7. Decant

Pour the tea into the fairness vessel.

Please note that tea is not poured directly from the teapot to the cups, because then the first cup of tea would have a slightly weaker taste than the last cup of tea. To ensure that everyone's cup of tea is equal, each brew is poured from the teapot into the fairness, and then poured into the tea cups. 

8. Share

Pour the tea from the fairness vessel into the teacups.

9. Brew Again

Leaves can be re-brewed at least four times. Use the same temperature of water and add 10-20 seconds for each brew. Note the
changes in color, flavor, and aroma
from brew to brew.

 

1. Gather*

Gather your tea and teawares, including a second mug or other vessel to brew the tea in.

2. Measure

Measure out your tea into the tea holder. Use 5 grams of tea per 8 ounces of water.  Heat your water to 195°F/90°C.

 3. Transfer

Place the tea leaves in the second mug (or whatever vessel you're brewing the tea in).

4. Fill 

Pour hot water over the leaves in a circular motion.

5. Steep

Let the leaves steep for 3-4 minutes.

6. Strain

Pour your tea into your mug through a strainer.

1. Gather

Gather your tea and teawares.

2. Measure

Measure out your tea leaves. Use about 10g of tea per liter of water.


3. Transfer

Place the tea leaves into the jar.

4. Pour

Fill the jar with the appropriate amount of cold water (based on how much tea your'e using).  

Replace lid. 

5. Shake or Stir

Give the jar a little shake or stir so all the leaves get wet.

6. Steep

Steep the tea in the fridge overnight. 

Your tea will keep in the fridge for a week.
